Many thanksI think the response time can vary greatly, depending on the credit card provider and the nature of each claim.
Like you say, right now loads of these claims will be going in and things will be taking longer than usual.
If there's no resolution eight weeks after submitting your claim, you can refer the claim to the Financial Ombudsman - check out the link for chapter and verse (towards the end, section titled "Financial Ombudsman Service").

I made a claim last year that went very smoothly and was paid promptly.
It was initially against Thomas Cook; the ball was in their court when they went out of business, S75 claim meant I got every penny back.
I put in a comprehensive set of documents as evidence, which might have helped to avoid any delays.
Have you spoken to the card company? As I did this 8weeks ago and am still waiting for the claim form.. When I ring them they tell me they are busy and it will be upto 60days before they even start...
